- sweet potatoes
- olive oil
- beef, chicken or plant-based mince
- Taco Seasoning
- water
- Sea salt
To serve (optional):
- Thick natural yoghurt or sour cream
- Sliced avocado or guacamole
- Fresh coriander
- Lime wedges
Method
Roast the sweet potatoes
Preheat oven to 200ยฐC. Scrub the sweet potatoes and pierce a few times with a fork. Place directly on a baking tray and roast for 45โ55 minutes, or until tender all the way through.
Cook the filling
Heat olive oil in a frying pan over medium heat. Add the mince and cook until browned. Sprinkle over the Taco Spice Blend, add the water, and stir well. Simmer for 3โ5 minutes until fragrant and evenly coated. Season lightly if needed.
Assemble
Split the sweet potatoes down the centre and gently fluff the flesh with a fork. Spoon the taco-spiced filling generously over each potato.
Finish and serve
Top with yoghurt or sour cream, avocado, coriander and a squeeze of lime. Serve hot.
