Ingredients

  • 10 green prawns peeled, unpeeled or peeled with tails on are all fine options
  • 1 Tbsp neutral oil grapeseed, rice bran, or light olive oil
  • 1 large pinch Kaffir Lime, Ginger & Chilli Finishing Salt
  • fresh lime wedges, to serve kaffir lime or other

Instructions

Step 1: Prep the Prawns

  • Start by tossing your peeled prawns in a bowl with the neutral oil and Kaffir Lime, Ginger & Chilli Finishing Salt. Make sure they’re evenly coated - this little step is where the magic starts.

Step 2: Fire Up the BBQ

  • Heat your barbecue or grill pan to medium-high
  • Lay the prawns down in a single layer and grill for 2–3 minutes per side, or until they’re just opaque and lightly charred around the edges.

Step 3: Serve and Sprinkle

  • Transfer the prawns to a platter, squeeze over some fresh lime juice, and serve with extra lime wedges and a generous sprinkle of finishing salt on the side. A cheeky little extra pinch never hurt anyone.
