- potatoes (washed and cut into chunks)
- olive oil
- Tomato, Basil & Garlic Finishing Salt
Optional extras:
- tomatoes, finely chopped
- red onion or spring onion, finely chopped
- garlic cloves, minced
- chopped herbs
- olives, coarsely chopped
Method
- Preheat oven to 200°C.
- Place potatoes in a pot of salted water and bring to a boil. Simmer for 8–10 minutes until just tender.
- Drain and allow to steam dry for a few minutes.
- Toss with olive oil and spread onto a baking tray.
- Add any desired optional extras
- Roast for 35–40 minutes, turning once, until golden and crispy.
